Vegetable Meat Balls

Ingredients

  • 3 raw potatoes
  • 3 raw carrots
  • 1 large onion
  • 2 c. cracker crumbs
  • 4 eggs
  • salt and pepper to taste
  • 2 lb. hamburger

Directions

    Grind the potatoes, carrots and onion or use food processor. Mix all ingredients together.

    Form in large balls, firmly packed. I use my ice cream scoop to make balls uniform.

    Fry nice and brown in limited amount of Crisco.

    Pack in deep baking dish. Cover with tomato juice and bake 1 hour at 350°.
