  • 2 lb. ground beef
  • 1 large potato, shredded
  • 2 carrots, shredded
  • 1 onion, diced
  • 1 Tbsp. salt
  • 1 tsp. pepper
  • 1 lb. grated, shredded cheese (optional)
  • 1 can cream of mushroom soup
  • 1/2 c. milk

Directions

    Mix ground beef, potato, carrots, onion, salt, pepper, and cheese together in a large bowl.

    Roll into meatballs 1-2 inches in diameter.

    Place in baking dish and bake at 350° until almost done (approximately 20 minutes).

    Drain.

    Pour soup over meatballs. Place back into oven, and bake until meatballs are finished (15 minutes).

    Crackers, eggs, chili powder, garlic and cumin make good additions to this recipe!
