- 1 carrots (about 1 c. grated)
- 1/2 zucchini (about 1/2 c. grated)
- 1 scallion
- 1/2 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 egg
- 1/4 c. milk
- 2 Tbsp. oil
Directions

1Grate the carrot and zucchini.

2Slice scallion.

3Combine flour, baking powder, salt and pepper.

4Beat together the egg, milk, carrot, zucchini and scallion.

5Stir wet ingredients into dry until just combined.

6Heat 1 tablespoon oil in a frying pan over medium heat.

7Pour batter by tablespoons into pan, making a few pancakes at a time.

8Cook until golden, about 2 minutes.

9Add remaining oil to pan as needed.

10Serve at once.
