Ingredients

  • 1 lb. or less mushrooms
  • 1 onion
  • 3 squash (tender)
  • 1 bell pepper
  • 3 to 4 Tbsp. margarine
  • salt to taste
  • garlic salt to taste
  • pepper to taste
  • 1 large tomato
  • 1 c. mayonnaise
  • 1 c. or more Mozzarella cheese

Directions

    Saute bell pepper, onion and squash.

    Slice tomato and place on unbaked pie crust.
  3. 3
    Add sauteed vegetables and mushrooms.
  4. 4
    Mix cheese and mayonnaise and spread to top.
  5. 5
    Bake at 350° approximately 1 hour.

    If it gets brown on top before it's done, put foil, loose, on top and bake until done.

    I use a little more cheese than this.
