- 1/8 c. olive oil
- 2 Tbsp. margarine
- 1 medium eggplant, peeled and cubed
- 1 large onion, chopped
- 2 medium zucchini, cubed
- 4 medium tomatoes, peeled and cubed
- 3 eggs
- 3/4 c. Parmesan cheese, grated
- 1 Tbsp. parsley, minced
- 1/4 tsp. basil
- 1/8 tsp. oregano
- 1/2 lb. thinly sliced Mozzarella cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions

1Preheat oven to 400°.

2Saute eggplant, onion and zucchini in oil for 5 minutes.

3Add tomatoes.

4Cover, reduce heat to low and cook for 20 minutes until soft.

5Transfer to a mixing bowl to cool.
