  • 1 1/2 c. cooked rice, at room temperature
  • 3/4 c. egg substitute, divided (real egg may be used)
  • 3/4 c. shredded low-fat Mozzarella cheese, divided
  • 1 1/2 c. chopped fresh broccoli
  • 3/4 c. sliced fresh mushrooms
  • 1/4 c. skim milk
  • 1 Tbsp. margarine, melted

Directions

    In a bowl, combine rice, 1/4 cup egg substitute and half of the cheese; mix well.

    Pat into the bottom and up the sides of a 9-inch pie plate coated with nonstick cooking spray.
