- 1 c. whole wheat flour
- 1 1/2 c. (6 oz.) shredded sharp Cheddar cheese, divided
- 1/4 tsp. paprika
- 1/4 c. vegetable oil
- 1 c. thinly sliced zucchini
- 1/4 c. sliced mushrooms
- 1/4 c. black olives, sliced
- 1/4 c. sliced green onions
- 2 Tbsp. water
- 3 eggs, beaten
- 1 1/2 c. half and half
- 1 Tbsp. chopped fresh parsley
- 2 tsp. dried whole oregano
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions

1Combine flour, 1/2 cup cheese, paprika and oil; stir well. Press mixture into a 9-inch quiche dish.

2Microwave at High 4 minutes; remove from oven and set aside.

3Combine zucchini and next 4 ingredients in a 1-quart casserole; cover with heavy-duty plastic wrap.

4Microwave at High 3 to 4 minutes.

5Drain well on paper towels.

6Sprinkle 1/2 cup cheese over crust; top with vegetable mixture.

7Combine eggs, half and half and seasonings; stir until well blended.

8Pour mixture over vegetables; microwave at Medium-high (70% power) 12 to 15 minutes, or until a knife inserted off center comes out clean (center will be slightly soft). Sprinkle with remaining 1/2 cup cheese.

9Cover; let stand on the countertop 10 minutes before serving.
