- 2 c. all-purpose flour
- 1 c. whole wheat flour
- 1 c. sugar
- 1 Tbsp. baking powder
- 1 1/2 tsp. ground cinnamon
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1/4 tsp. ground ginger
- 1/3 c. shortening
- 2 c. shredded carrots or zucchini
- 1/2 c. finely chopped nuts
- 1/2 c. chopped dates or raisins
- 2 eggs
- 3/4 c. milk
Directions

1Preheat oven to 350°.

2Combine flours, sugar, baking powder, cinnamon, salt, baking soda and ginger in large bowl.

3Cut shortening into dry ingredients with pastry blender until mixture resembles coarse crumbs.

4Stir in carrots, nuts and dates.

5Beat eggs and milk together with fork; add to bowl and stir only until dry ingredients are moistened.

6Batter will be stiff.

7Pour batter into 2 well-greased loaf pans.

8Bake at 350° for 1 hour or until done.

9Cool for 10 minutes in pan.

10Remove from pan and cool on rack before slicing.
