- 2 Tbsp. butter (unsalted)
- 1 small onion, minced
- 3 Tbsp. flour
- 1 tsp. Dijon mustard
- 1 c. light cream or half and half
- dash each: fresh ground pepper and salt
- 1 lb. shrimp, cooked, shelled, deveined and chopped
- 1 egg, beaten
- 1 to 1 1/2 c. finely crushed cracker crumbs
- 3/4 c. peanut or olive oil
- cocktail sauce or mayonnaise
Directions

1Melt butter in a large saucepan.

2Add onion and cook over low heat until soft.

3Stir in flour, mustard, cream, salt and pepper. Stir until mixture is smooth and begins to thicken.

4Add shrimp and mix well.

5Put in a bowl; cover and refrigerate for 1 hour. After chilling, form into patties about 2 to 3 inches in diameter. Dip into beaten egg and then into cracker crumbs.

6Heat oil in a heavy skillet until sizzling.

7Fry patties until crispy on both sides.

8Drain on paper towels.

9Serve with sauce.
