Ingredients
- 1/4 c. chopped onion
- 3 Tbsp. butter
- 1 1/2 c. sliced mushrooms
- 2 c. chopped broccoli
- 1 c. chopped tomato
- 2 c. water
- 2 chicken bouillon cubes
- 1 c. uncooked rice
- 1/2 Tbsp. salt
- 1/2 tsp. oregano
- 1/4 c. Parmesan cheese
Directions

1Saute onion in butter in skillet until golden brown.

2Add mushrooms, broccoli and tomato.

3Cook for 4 minutes, stirring frequently.

4Add water and bouillon cubes.

5Bring to a boil.

6Stir in rice, salt and oregano.

7Cook, covered, over low heat for 20 minutes or until water is absorbed.

8Mix in cheese.

9Serve hot or cold.
