Ingredients
- 2 tsp. vegetable oil
- 2 medium green peppers, cut into strips
- 1 c. chopped onion, divided
- 2 c. chopped cauliflower
- 2 c. chopped broccoli
- 2 cloves garlic, chopped
- 1/2 tsp. dried whole thyme
- 1 Tbsp. chicken flavored bouillon granules
- 3 c. hot water
- 1 1/2 c. uncooked brown rice
- 3 Tbsp. reduced sodium soy sauce
Directions

1Place oil in large skillet; add green pepper, 1/2 cup chopped onion, cauliflower, broccoli and garlic.

2Cook on high for 5 minutes.

3Stir in thyme.

4Remove from heat.

5Dissolve bouillon granules in water in 2-quart casserole dish.

6Stir in rice, 1/2 cup chopped onion and soy sauce.

7Cover and bake at 350° for 20 minutes.

8Remove casserole from oven and stir in vegetable mixture..

9Cover, bake an additional 10 to 15 minutes or until all liquid is absorbed.
