Vegetable Rice Casserole

  • 2 tsp. vegetable oil
  • 2 medium green peppers, cut into strips
  • 1 c. chopped onion, divided
  • 2 c. chopped cauliflower
  • 2 c. chopped broccoli
  • 2 cloves garlic, chopped
  • 1/2 tsp. dried whole thyme
  • 1 Tbsp. chicken flavored bouillon granules
  • 3 c. hot water
  • 1 1/2 c. uncooked brown rice
  • 3 Tbsp. reduced sodium soy sauce

Directions

    Place oil in large skillet; add green pepper, 1/2 cup chopped onion, cauliflower, broccoli and garlic.

    Cook on high for 5 minutes.

    Stir in thyme.

    Remove from heat.

    Dissolve bouillon granules in water in 2-quart casserole dish.

    Stir in rice, 1/2 cup chopped onion and soy sauce.

    Cover and bake at 350° for 20 minutes.

    Remove casserole from oven and stir in vegetable mixture..

    Cover, bake an additional 10 to 15 minutes or until all liquid is absorbed.
