- 3 lb. beef
- 6 c. cold water
- 1 tsp. salt
- 1/4 tsp. thyme
- 6 peppercorns
- 2 bay leaves
- 1 (16 oz.) pkg. vegetable soup mix
- 1 (16 oz.) can tomatoes
Directions

1In large kettle, combine beef, water, salt, thyme, peppercorns and bay leaves.

2Simmer 3 hours or until meat is tender.

3Remove beef, peppercorns and bay leaves.

4Separate meat from bones. Return meat to soup.

5Add vegetable mix and canned tomatoes. Cover.

6Simmer until vegetables are tender, about 20 minutes.
