Vegetable Soup

Ingredients

  • soup bone (beef)
  • 1/2 gal. water
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. thyme
  • 1 Tbsp. dry parsley or 1/4 c. fresh chopped
  • 1 large can whole tomatoes
  • 3 medium onions, chopped
  • 3 stalks celery, chopped
  • 1/2 head cabbage, chopped
  • 4 potatoes, chopped

Directions

    Put soup bone in pot of water.

    Add salt, pepper, thyme, parsley and tomatoes.

    Cook and simmer for approximately 2 hours. Add other vegetables and cook for another hour, then add 1 large bag of frozen mixed vegetables.

    Cook for about 30 minutes. Serve with loaf of fresh baked bread and enjoy.
