  • 3 to 4 soup bones or 4 ribs (fat trimmed)
  • 1 large chopped onion
  • 4 stalks chopped celery
  • 3 diced potatoes
  • 2 cans chopped tomatoes
  • salt and pepper
  • 1 to 2 boxes thawed mixed vegetables
  • 1/2 c. extra corn
  • 1 c. extra lima beans
  • 1 c. tomato sauce
  • 4 chopped carrots
  • 1 small head cabbage (optional)

Directions

    Cover soup bones and meat with water.

    Add celery and onions and carrots.

    Boil about 1 hour.

    Add remaining ingredients. Return to a boil then simmer until potatoes are done, 15 to 20 minutes.
