- 1/2 lb. beef cubes
- 3 Tbsp. beef base
- 6 3/4 c. water
- 1/2 c. chopped onion
- 2/3 c. celery
- 1/2 tsp. thyme
- 2 medium potatoes, diced
- 1 1/4 c. shredded cabbage
- 1 can (1 lb.) tomatoes, crushed
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 pkg. (10 oz.) frozen mixed vegetables
Directions

1Brown beef cubes in large kettle.

2Drain off excess fat.

3Add beef base, water, onion, celery, thyme and potatoes.

4Bring to a boil and simmer until vegetables are tender and meat is cooked, about 1 hour.

5Add cabbage, tomatoes, salt, pepper and frozen vegetables.

6Bring to a boil, then simmer until frozen vegetables are tender.

7Makes 16 (1-cup) servings.
