  • 1 tablespoon olive oil
  • 1/2 onion peeled and diced
  • 2 stalks celery trimmed and diced
  • 2 carrots peeled and chopped
  • 1 garlic clove peeled and minced
  • 1 tablespoon herbs Provencal
  • 28 ounces peeled tomatoes
  • 3 cups water
  • salt
  • ground black pepper

Directions

    Place a large pot on the stove at low heat. Add the oil, onion, celery, carrot, and garlic. Mix everything well and cook until the onion becomes transparent, about 5 minutes.

    Add the herbs and cook for another minute.

    Add the tomatoes into the pot. Mash them using a wooden spoon. Add the water and a pinch each of salt and black pepper and mix well.

    Cover the pot and let it simmer for 10 minutes. Serve warm.
