- 1 tablespoon olive oil
- 1/2 onion peeled and diced
- 2 stalks celery trimmed and diced
- 2 carrots peeled and chopped
- 1 garlic clove peeled and minced
- 1 tablespoon herbs Provencal
- 28 ounces peeled tomatoes
- 3 cups water
- salt
- ground black pepper
Directions

1Place a large pot on the stove at low heat. Add the oil, onion, celery, carrot, and garlic. Mix everything well and cook until the onion becomes transparent, about 5 minutes.

2Add the herbs and cook for another minute.

3Add the tomatoes into the pot. Mash them using a wooden spoon. Add the water and a pinch each of salt and black pepper and mix well.

4Cover the pot and let it simmer for 10 minutes. Serve warm.
