Ingredients

  • 12 cup dried porcini mushrooms or 1 rind parmigiano-reggiano cheese
  • 2 medium onions, thinly sliced
  • 4 medium carrots, chopped
  • 1 medium leek, cleaned thoroughly and thinly sliced
  • 3 celery ribs, sliced thin
  • 6 garlic cloves, sliced
  • 10 cups cold water

    Place all the ingredients in a large stock pot.

    Cover with water.

    Bring to a boil.

    Reduce heat and simmer for 1 hour.
