Ingredients

  • 1 tbsp oil
  • 1 medium onion, diced
  • 1 clove garlic, finely chopped
  • 1 None red pepper, diced
  • 1 medium carrot, peeled and sliced
  • 150 g mushrooms, sliced
  • 1-2 None spring onions, finely sliced
  • 75 g reduced fat feta cheese
  • 4 medium eggs
  • 1 bunch mixed herbs, such as parsley and basil
  • 125 ml semi-skimmed milk

Directions

    Preheat the oven to 350°F. Heat oil in a frying pan and saute the onion, garlic, pepper, carrot, mushrooms and spring onions for about 5 mins. Transfer to a greased 8 inch round baking dish. Crumble the feta on top.

    Beat the eggs in a bowl and add the herbs and milk. Season with salt and pepper and pour over the vegetables and cheese. Bake for 20 mins until golden brown.
