Ingredients
- 2 teaspoons olive oil
- 1 cup onion, sliced
- 12 cup red pepper, sliced
- 12 cup green pepper, sliced
- 1 small garlic clove, minced
- 1 medium tomatoes, diced
- 3 eggs
- 1 tablespoon milk
- 18 teaspoon salt
- 18 teaspoon pepper
- 1 ounce boiled ham, diced
Directions

1In a 9- inch non-stick skillet heat oil; add onions, peppers, and garlic and cook over high heat, stirring frequently, until tender-crisp about 2 minutes.

2Add tomato and cook, stirring occasionally, until heated through, about 1 minute.

3Transfer to a serving platter; set aside and keep warm.

4Using a fork, in a small mixing bowl combine eggs, milk, salt, and pepper and beat until well combined; stir in ham.

5To same skillet add egg mixture and cook over medium-high heat, stirring frequently, until eggs are set, 3 to 4 minutes.

6To serve, spoon egg mixture over vegetable mixture.
