  • 2 Tbsp. oil
  • 2 medium zucchini, cut into 1/2-inch slices
  • 2 onions, sliced
  • 1 garlic clove, cut in half
  • 2 Tbsp. oil
  • 1 small bunch broccoli, cut into 2 x 1-inch pieces
  • 1 head cauliflower, separated into flowerets
  • 1 c. water
  • 1 lb. can garbanzo beans, drained
  • 2 c. spaghetti sauce
  • 1/2 c. grated Parmesan cheese

Directions

    Heat 2 tablespoons oil in a 5-quart Dutch oven.

    Over medium-high heat, cook zucchini, onions and garlic until crisp, then discard garlic and place zucchini and onions in bowl.

    Heat another 2 tablespoons oil in same Dutch oven.

    Stir in broccoli and cauliflower.

    Add water, cover and cook until tender-crisp, stirring occasionally.

    Return zucchini and onion to pan.

    Add remaining ingredients.
