  • 1 c. dried kidney beans
  • 3 c. water
  • 1 Tbsp. vegetable oil
  • 2 c. chopped onion
  • 1 green pepper, chopped
  • 2 c. sliced mushrooms
  • 1 c. thinly sliced carrots
  • 2 c. fresh or canned unsalted tomatoes, chopped
  • 1 (6 oz.) can unsalted tomato paste
  • 3/4 c. water
  • 2 Tbsp. chili powder
  • 1 Tbsp. vinegar
  • 1 to 2 tsp. minced garlic
  • 1 tsp. oregano
  • 1 tsp. cumin
  • 1/4 tsp. black pepper
  • 1 bay leaf

Directions

    Place beans in 3 cups water in saucepan.

    Bring to a boil; cook 2 minutes.

    Do not drain; set aside for 1 hour.

    Return beans to heat, adding water to cover if necessary.

    Simmer for 1 hour or until beans are tender.
