Vegetarian Chili

Ingredients

  • 2 medium onions, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeno pepper, chopped
  • 8 oz. fresh mushrooms, chopped
  • 3 T pure chili powder
  • 1 T cumin
  • 1 t red pepper flakes
  • 2 t garlic powder
  • 1 t dried oregano
  • 2 jars crushed tomatoes (24 oz)
  • 2-3 T tomato paste
  • 1 cup texturized vegetable protein
  • 1/4 cup water
  • 1 can kidney or other beans
  • Optional: grated cheddar cheese, scallions, sour cream

Directions

    1. Saute onions, peppers and mushroom until all soft and wilted.

    2. Add spices and stir about 1 minute.

    3. Add tomatoes, tomato paste, TVP and water. Let simmer 2 hours. Add water or vegetable broth if it gets too thick.

    4. Add beans before serving.

    5. Put out optional toppings and serve over rice, corn bread or spaghetti.
