Vegetarian Eggplant Burger

Ingredients
- 2 large Eggplant
- 4 tbsp Oatmeal
- 3 tbsp Katakuriko (or tapioca flour)
- 1 Salt and pepper
- 2 tbsp Oil of your choice
Directions

1Cook one eggplant and remove the skin.

2Mince the cooked eggplant on a cutting board until it forms a paste.

3Finely chop the other eggplant and sprinkle with salt.

4Let sit for 10 minutes.

5Lightly wring it out!

6(For those who would like to work through the extra step, you can briefly soak the eggplant in water before sprinkling with salt).

7Add all of the eggplants to a bowl and mix with your hands!

8Heat some oil in a frying pan and just like you would with normal burgers, close the lid and steam fry!

9(Don't touch them too much!)

10Flip over and continue frying.

11Here I added grated daikon radish, soy sauce, and kabosu citrus for a Japanese twist.

12You could also top with mozzarella cheese and ketchup to make a rice burger.

13Or try it in sandwiches.
