- 2 (10 oz.) pkg. spinach
- 1/2 c. chopped onion
- 1 Tbsp. oil
- 1 c. grated raw carrots
- 2 c. sliced fresh mushrooms
- 2 (15 oz.) cans tomato sauce
- 1 (6 oz.) can tomato paste
- 1/2 c. chopped, pitted black olives
- 1 1/2 tsp. oregano
- 2 c. cottage cheese
- 1 lb. sliced Monterey Jack cheese
- 1/4 c. grated Parmesan cheese
Directions

1Saute onion in oil until soft.

2Add carrots and mushrooms. Cook until crisp-tender.
