- 1 lb. ground beef or ground turkey
- 1 c. chopped onion
- 1/2 c. chopped green pepper
- 1 clove garlic, minced
- 1 Tbsp. chili powder
- 1 (32 oz.) bottle tomato or vegetable juice
- 1 c. uncooked long grain rice
- 1/2 tsp. salt
Directions

1In a skillet, brown ground beef; drain.

2Stir in the onion, green pepper, garlic and chili powder.

3Cook and stir until vegetables are tender.

4Stir in remaining ingredients; bring to a boil.

5Reduce heat; cover and simmer for 20 to 25 minutes, or until the rice is tender and most of the liquid is absorbed.
