Vegetarian Pate

Ingredients

  • 1/2 lb. onion, finely diced
  • 1/2 oz. fresh chopped garlic
  • 3/4 lb. mushrooms, chopped
  • 1/2 tsp. dried thyme
  • 1 c. sliced/toasted almonds
  • 2 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • touch of almond extract
  • vegetable oil spray

Directions

    Saute onion, garlic, mushrooms and thyme at medium heat in saucepan sprayed with vegetable oil; cook until all appearance of liquid is gone.

    While this is cooking, combine almonds, olive oil and extract in food processor.

    Add mushroom mixture and continue to process until smooth.

    Slowly add balsamic vinegar while processing.

    Chill in fridge.

    Use it as a traditional pate, stuff mushrooms, crusty bread or crackers.
