- 1 cup Medium Onion, Chopped
- 2 Garlic Cloves, minced
- 1 tbsp Curry Powder(hot)
- 1/2 tsp Indian Paprika
- 1/2 tsp Turmenic
- 1/2 tsp Cumin
- 1 tbsp Olive Oil
- 1 14.5 oz can of Organic Diced Tomatoes
- 10 oz of fresh baby Spinach
- 1 15 oz can of Chickpeas, rinsed and drained
- 1 cup Vegetable broth
- 1/4 tsp Sea Salt
- 1/4 tsp ground pepper
Directions

1In a nonstick skillet, cook onion,garlic until brown for 3-5 minutes

2add curry,paprika,turmeric, cumin,salt and pepper.

3stir in mixture.

4Stir in diced tomatoes, spinach and 1 cup of chickpeas

5In a blender, combine the vegetable broth and remaining chickpeas.

6Stir mixture into skillet and heat for 10 minutes and let simmer for 5 additional minutes.

7Optional Balsamic Brown rice for side dish
