Ingredients
- 1 c. uncooked rice
- 1/2 c. chopped onion
- 2 minced garlic cloves
- 2 Tbsp. oil
- 1 c. chopped coarsely zucchini
- 1 c. chopped green onion
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 c. chopped tomatoes
- 1 (16 oz.) drained kidney beans
- 1 c. shredded Cheddar cheese
Directions

1Cook rice; use package directions.

2In large skillet, saute onion and garlic in oil until tender.

3Add zucchini, green onion, pepper, oregano and salt.

4Cook until crisp and tender, about 5 minutes.

5Add tomatoes and beans; cover and heat through.

6Serve on hot rice and sprinkle with cheese.
