- 2 carrots
- 2 sweet potatoes
- 1 eggplant
- 1 artichoke
- 1 bell pepper
- 1 tomato
- 2 stems parsley
- 2 stems cilantro
- 1 Tbsp. paprika
- 3 cloves garlic
- 1/2 onion
- 1/2 tsp. black pepper
- 1/2 tsp. cumin
- 1/4 c. olive oil
- 1/2 c. water
Directions

1Peel and cube all vegetables into 1 inch squares.

2Cut onion and garlic into small dices.

3Add spices and salt to taste.

4Warm oil.

5Saute onion and garlic in oil; add vegetables, spices and water.

6Turn heat to medium-hot.

7Cover and simmer for 45 minutes. Serve with lemons, olives and mushrooms.
