  • 2 carrots
  • 2 sweet potatoes
  • 1 eggplant
  • 1 artichoke
  • 1 bell pepper
  • 1 tomato
  • 2 stems parsley
  • 2 stems cilantro
  • 1 Tbsp. paprika
  • 3 cloves garlic
  • 1/2 onion
  • 1/2 tsp. black pepper
  • 1/2 tsp. cumin
  • 1/4 c. olive oil
  • 1/2 c. water

Directions

    Peel and cube all vegetables into 1 inch squares.

    Cut onion and garlic into small dices.

    Add spices and salt to taste.

    Warm oil.

    Saute onion and garlic in oil; add vegetables, spices and water.

    Turn heat to medium-hot.

    Cover and simmer for 45 minutes. Serve with lemons, olives and mushrooms.
