Ingredients

  • 1 medium green pepper (chopped)
  • 1 medium sweet red pepper (chopped)
  • 1 small onion (chopped)
  • 2 tsp olive oil
  • 1 packages frozen vegetarian meat crumbles (thawed)
  • 2 tbsp fresh cilantro (minced)
  • 1 tsp ground cumin
  • 1 1/2 cup salsa
  • 5 flour tortillas
  • 1 1/4 cup shredded reduced fat mexican blend cheese (divided)
  • 1/3 cup pickled jalapeno slices
  • 5 tbsp sliced ripe olives

Directions

    In a large pan coated with some cooking spray, saute peppers and onion in oil until tender.

    Stir in meat crumbles, cilantro and cumin and heat it through
  3. 3
    Spread 1/4 cup salsa into a pie plate.

    (deep dished preferably and 9 inches) coated with cooking spray

    Layer it with 1 tortilla,fourth of the meat crumble,1/4 cup of salsa, 1/4 cup of cheese,3 jalapeno slices and a tablespoon of olives

    Repeat the layers three times and top with remaining tortilla,salsa,olives,and jalapenos.

    Cover it and bake at 350 for 30 minutes

    Uncover it and sprinkle in some cheese and bake it for 5-10 minutes until cheese is melted.
