  • 1 lb ground beef
  • 1 medium white onion, peeled and chopped
  • 1 cup plain cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 eggs, lightly beaten
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 cup cooked black-eyed peas
  • 1 cup creamed sweet corn
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 pickled jalapeno peppers, chopped

    Preheat oven to 325 degrees.

    Lightly grease an 11 x 7 inch baking dish and set aside.

    In a large skillet over medium heat, brown the beef, stirring until it crumbles and no pink remains.

    With a slotted spoon, remove the ground beef from the pan and set aside to drain on paper towels.

    Add the onions and brown 5 minutes in the pan drippings; drain and set aside.

    In a large mixing bowl, combine the cornmeal, flour, and baking soda.

    Make a well in the center and add the eggs, buttermilk, and oil, stirring just until moistened.

    Add the reserved beef and onions.
