- 1 lb ground beef
- 1 medium white onion, peeled and chopped
- 1 cup plain cornmeal
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 2 eggs, lightly beaten
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 cup cooked black-eyed peas
- 1 cup creamed sweet corn
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 pickled jalapeno peppers, chopped
Directions

1Preheat oven to 325 degrees.

2Lightly grease an 11 x 7 inch baking dish and set aside.

3In a large skillet over medium heat, brown the beef, stirring until it crumbles and no pink remains.

4With a slotted spoon, remove the ground beef from the pan and set aside to drain on paper towels.

5Add the onions and brown 5 minutes in the pan drippings; drain and set aside.

6In a large mixing bowl, combine the cornmeal, flour, and baking soda.

7Make a well in the center and add the eggs, buttermilk, and oil, stirring just until moistened.

8Add the reserved beef and onions.

9Stir in the peas, corn, cheese, salt, pepper, and jalapenos, mixing well.

10Spread into prepared pan and bake 1 hour.
