Ingredients

  • 1 large eggplant (cubed)
  • 1 -2 medium sized red bell pepper (chopped)
  • 8 -10 small portebella mushrooms (optional)
  • 4 tablespoons margarine
  • half of a bag of 4 ounce bag mozzarella cheese
  • 5 fresh basil leaves (very finely chopped)
  • 1 clove fresh garlic (very finely chopped)
  • 3 packages of instant ramen noodles (oriental flavor)
  • salt & pepper

Directions

    After eveything is chopped and prepared, in a large frying pan on high heat, combine margarine, peppers, eggplant, 2 teaspoons salt, basil leaves and garlic.

    Mix together and then cover, mixing occasionally, until a little browning starts to happen, add mushrooms and desired amount of salt and pepper.

    Pour in cheese, then cover and let simmer on low heat.

    In a large saucepan, cook ramen noodles as directed on the package.

    Once tender, strain and add seasoning.

    Mix your cheese into the vegetables and add more salt if needed.

    Put desired amount of noodles in the bottom of a bowl or plate and top with desired amount of vegetable mix and enjoy!
