- 2 tbsp olive oil
- 2 None zucchini, cut into thick sticks
- 8 None large eggs, lightly beaten
- 6 None green onions, sliced
- 1/2 cup Parmesan, grated
- 2 tbsp fresh basil, finely shredded, plus extra leaves for garnish
- 1 cup cherry tomatoes, halved
- None None mixed salad, to serve

1Preheat oven to 400°F.

2Heat oil in an ovenproof pan on medium. Cook zucchini for 3 mins, until just tender.

3Whisk together the eggs, green onions, Parmesan and basil. Season. Pour over zucchini and scatter tomatoes on top. Bake for 15-20 mins, until set. Scatter over extra basil and serve with salad.
