Ingredients

  • 2 tbsp olive oil
  • 2 None zucchini, cut into thick sticks
  • 8 None large eggs, lightly beaten
  • 6 None green onions, sliced
  • 1/2 cup Parmesan, grated
  • 2 tbsp fresh basil, finely shredded, plus extra leaves for garnish
  • 1 cup cherry tomatoes, halved
  • None None mixed salad, to serve

Directions

    Preheat oven to 400°F.

    Heat oil in an ovenproof pan on medium. Cook zucchini for 3 mins, until just tender.

    Whisk together the eggs, green onions, Parmesan and basil. Season. Pour over zucchini and scatter tomatoes on top. Bake for 15-20 mins, until set. Scatter over extra basil and serve with salad.
