- 2 zucchini cut into thick sticks
- 8 large eggs lightly beaten
- 6 green onions sliced
- 1/2 cup Parmesan grated
- 2 tablespoons fresh basil finely shredded, plus extra leaves for garnish
- 1 cup cherry tomatoes halved
- mixed salad to serve

1Preheat oven to 400°F.

2Heat oil in an ovenproof pan on medium. Cook zucchini for 3 mins, until just tender.

3Whisk together the eggs, green onions, Parmesan and basil. Season. Pour over zucchini and scatter tomatoes on top. Bake for 15-20 mins, until set. Scatter over extra basil and serve with salad.
