Ingredients

  • 1 None potato, unpeeled
  • 1 None zucchini, grated coarsely, excess moisture squeezed out
  • 1 None carrot, grated coarsely
  • 1 None red pepper, sliced thinly
  • 2 tbsp self-rising flour
  • 1 None egg, beaten lightly

Directions

    Boil, steam or microwave potato until tender. When cool enough to handle, peel then coarsely grate into a large bowl.

    Add remaining ingredients to grated potato and toss to combine.

    Oil a large frying pan and place over medium heat. Drop 1 tbsp mixture into a 3 inch greased heart-shaped cutter in pan. Cook until browned on both sides and cooked through. Repeat with remaining mixture.
