Veggie Lasagna

- 1 medium onion
- 2 clove garlic
- 2 tbsp olive oil
- 2 cup spinach
- 1 medium egg
- 2 tbsp Italian spice blend
- 2 cup mozzarella cheese
- 12 whole grain lasagna noodles
- 2 cup pasta sauce
- 2 cup frozen vegetables
Directions

1Cook whole grain lasagna noodles according to the package instructions.

2Saute the onion and garlic in oil over medium high heat.

3Add veggies and saute until tender.

4Add spices.

5Set aside.

6Whisk egg into 1 cup of cheese and stir in fresh spinach.

7Pour a little sauce in the bottom of a greased 9x13 pan.

8Top with 4 lasagna noodles,1/2 cup ricotta mixture, 1/2 of the veggies, and 3/4 cup sauce.

9Repeat.

10Top entire pan with noodles, remaining sauce, and cheese.

11Cover with tin foil and bake for 40 minutes at 375F.

12Remove foil and bake for 10 minutes more or until cheese is bubbly.
