  • 5 potatoes
  • 12 cup milk
  • 3 tablespoons butter
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1 12 teaspoons Dijon mustard
  • 1 teaspoon dried thyme
  • 12 teaspoon dried basil
  • salt and pepper
  • 1 (14 ounce) can diced tomatoes
  • 1 (14 ounce) can green beans, drained
  • 1 (14 ounce) cansliced carrots, drained
  • 1 (19 ounce) can cannellini beans, drained and rinsed
  • 12 cup cheddar cheese

Directions

    Peel,dice and boil 5 potatoes for mashing.

    Saute onion and garlic in 2 T. butter in casserole pan.

    Add: Dijon mustard, dried thyme, Dried Basil, salt and pepper.

    Add: tomatoes, green beans, carrots, and cannellini beans.

    Mix together.

    Drain then mash potatoes with milk and 1 T. butter.

    Spread mashed potatoes over top of mixture.

    Top with grated cheddar cheese.

    Bake 25 minutes at 350.
