Ingredients

  • None None FOR THE SALSA
  • 3 None tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 2 tbsp chopped cilantro
  • None None FOR THE GUACAMOLE
  • 2 medium avocados, peeled and pitted
  • 1 tbsp lemon juice
  • 1/2 tsp mild chili powder
  • None None FOR THE TACOS
  • 8 None taco shells
  • 1 can (16 oz) refried beans, heated
  • 2/3 cup grated Cheddar cheese

Directions

    Mix the salsa ingredients in a small bowl. Season generously with salt and freshly ground black pepper. Set aside until required.

    For the guacamole, mash the avocado with the lemon juice, chili powder, salt and freshly ground black pepper, until almost smooth and creamy. Transfer to a small serving bowl. Cover with plastic wrap and set aside.

    Fill taco shells with refried beans, salsa, guacamole and grated Cheddar cheese.
