- 1 onion chopped
- 2 bacon rashers, chopped
- 1 bunch parsley chopped
- 3 1/2 tablespoons butter
- 6 1/4 cups peas young, or 400 g shelled peas
- 3/4 cup arborio rice
- 6 1/3 cups beef stock from 2 cubes
- 1 cup Parmesan cheese grated
Directions

1Saute onion, bacon and parsley in the butter for 2 minutes until translucent.

2Add the peas, cover and cook slowly for about 10 minutes.

3Add the rice, stir, let it absorb all the fat from the pan.

4Add the stock and simmer gently until the rice is cooked but still al dente.

5Before serving stir in the grated cheese and serve immediately.
