- 1 1/2 c. butter, softened
- 1 c. granulated sugar
- 4 eggs, separated
- 1 tsp. almond extract
- 2 c. flour
- 1/4 tsp. salt
- green food coloring
- red food coloring
- 1 jar apricot preserves
- 2 1/2 sq. semi-sweet chocolate
Directions

1Beat the paste, butter, sugar, egg yolks and almond extract until light and fluffy, 5 minutes.

2Beat in flour and salt.

3Beat egg whites with electric mixer until stiff peaks form; fold into almond mixture.

4Divide 3 ways.

5Add food coloring.

6Heat in a 350° oven.

7Heat preserves; spread over top.

8Cover with plastic wrap; press down.

9Keep in refrigerator overnight.
