- 1 lb. trimmed deer meat
- 6 oz. lean bacon ends
- 3/4 tsp. salt
- 1 tsp. dried crushed sage leaves
- 1/4 tsp. ground ginger
- 1/4 tsp. pepper
Directions

1Cut deer and bacon into 3/4-inch cubes.

2Place in medium mixing bowl.

3In small bowl, mix salt, sage, ginger and pepper. Sprinkle over meat; mix well.

4Chop or grind to desired consistency.

5Shape into thin patties and fry over medium heat until browned and cooked through, turning once.

6Sausage can also be frozen uncooked.
