Venison Chili

Ingredients

  • 3 Tbsp. salad oil
  • 1 large chopped onion
  • 2 cloves of garlic, chopped
  • 2 lb. ground venison
  • 1 (4 oz.) can green chilies
  • 10 oz. can beef consomme
  • 16 oz. can tomato paste
  • 14 1/2 oz. can stewed tomatoes
  • 1 tsp. ground cumin
  • 1-3 Tbsp. chili powder
  • 2 cans kidney beans

Directions

    In large Dutch oven, saute onion and garlic in oil.

    Add venison and cook until brown.

    Stir in chilies with their juice and all other ingredients except kidney beans.

    Bring to boiling point. Cover and simmer for 30 minutes.

    Add beans with their juice. Simmer 10 minutes.
