Ingredients
- Venison roast
- 1/3 c. sugar
- 1/4 c. salt
- 2 c. soy sauce
- 1 c. red wine
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Tabasco sauce
- 1/2 teaspoon onion pwdr
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic pwdr
- 1/4 teaspoon liquid smoke
Directions

1Trim all fat from meat, slice with grain about 1/4 to 1/2 inch thick.

2(The meat slices better when semi-frzn).

3Mix all ingredients together.

4Place meat in cold brine and leave overnight, not less than 8 hrs.

5Remove from brine and air dry.

6Smoke in smoker 12 to 16 hrs or possibly dry in oven at 150 degrees for 3 to 5 hrs or possibly till dry.
