Venison Shanks With Herbs

- 4 venison shanks (about 2 1/2 lb.)
- 2 Tbsp. butter
- 1 1/2 c. water
- 1 tsp. salt
- 1/4 c. flour
- 2 Tbsp. butter, melted
- 1/2 c. water
- 1 garlic cover
- 1 Tbsp. parsley
- 1 Tbsp. marjoram
- 1 tsp. basil
- cooked noodles
Directions

1In a heavy skillet, brown shanks on all sides in 1 tablespoon butter.

2Add 1 1/2 cups water and salt.

3Cook, covered, over low heat for 1 hour.

4In a small skillet, add flour to 2 tablespoons butter; cook and stir until flour is brown.

5Stir in 1/2 cup water until smooth.

6Add to meat and stir until smooth.

7Add herbs. Cover and cook slowly 1 more hour until meat is tender.

8Add more water during cooking if needed to maintain a good gravy.

9Place shanks on a bed of hot cooked noodles.

10Spoon gravy over them. Serves 4.
