- 1 1/2 C yellow cornmeal
- 1/2 C all-purpose flour
- 1 T baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1 1/2 C buttermilk
- 1 egg, lightly beaten
- 3 T bacon drippings (veg. oil)
- 3 T maple syrup
Directions

1Preheat oven to 425 F. Lightly greases an 8 in. cake/pie pan. Combine the dry in a large bowl, combine the wet, mix all well.

2Pour batter into prepared pan. Bake til golden, 15-20 mins. Cut into 8 wedges, serve warm w/butter & honey.
