Versatile Muffins Recipe

Ingredients

  • 1/4 c. shortening
  • 1/2 c. sugar
  • 1 (16 ounce.) can applesauce
  • 1 teaspoon baking soda
  • 2 c. whole wheat (or possibly white) flour and oatmeal
  • 1/2 c. bran
  • 1 (16 ounce.) can fruit (sm. chunks) (pears, blueberries and cranberry sauce
  • are great)

Directions

    Cream sugar and shortening in a mixing bowl.

    Heat applesauce in glass container for 2 min till boiling.

    Stir baking soda into applesauce.
  4. 4
    It will bubble and fizz.

    Mix applesauce into shortening/sugar till shortening is almost melted.

    Stir in flour, oatmeal and bran.

    Add in chunked fruit and stir just till fruit is well distributed in the mix.

    Spoon into cupcake papers in muffin pan till 3/4 full.

    Makes 12 medium muffins.
