- 3 to 4 carrots, sliced 1/8-inch thick (1 1/2 c.)
- 1/4 c. water
- 1/2 tsp. lite soy sauce or 1/4 tsp. each: soy sauce and water
- 1 tsp. bottled lemon juice or juice of 1/2 lemon
- 1/4 tsp. pepper to taste
Directions

1In a shallow, covered pan, steam carrot slices in water 7 to 9 minutes, until barely tender.

2Add a little more water if needed to prevent sticking.

3Sprinkle with soy sauce and lemon juice. Toss to mix.

4Add freshly ground pepper for garnish and flavor. Serves 2.

5Or microwave, using 1 tablespoon of water.
