Very Vanilla Tapioca Pudding

- 1/3 cup sugar
- 3 Tbsp. MINUTE Tapioca
- 2-3/4 cups milk
- 1 egg, beaten
- 1 vanilla bean , split
- 2 tsp. vanilla extract
Directions

1Combine sugar, tapioca, milk, egg and vanilla bean in medium saucepan.

2Let stand 5 min.

3Cook on medium heat until mixture comes to full rolling boil, stirring constantly.

4Remove from heat.

5(Pudding will thicken as it cools.)

6Remove and discard vanilla bean.

7Stir vanilla extract into pudding.

8Cool 20 min.

9; stir.

10Serve warm or chilled.
