- 4 leeks, sliced (no tops)
- 1 medium onion
- 1/4 lb. butter
- 5 medium potatoes, peeled and thinly sliced
- 4 c. chicken broth
- 2 c. milk
- 2 c. light cream
- 1 c. whipping cream
- chives (to garnish)
Directions

1In saucepan, cook leeks and onion in butter until tender, but not brown.

2Add potatoes, broth and 1 tablespoon salt.

3Cook for 35 to 40 minutes.

4Rub through a fine sieve.

5Return to heat; add milk and light cream.

6Season to taste.

7Bring to a boil; cool.

8Rub through very fine sieve.

9Stir in whipping cream.

10Chill thoroughly before serving.

11Garnish with chives.

12Makes 8 servings.
