Vidalia Onion Casserole

- 3 or 4 medium onions
- 6 Tbsp. butter
- 1 c. shredded Swiss or Cheddar cheese
- 3/4 c. half and half
- 2 eggs, beaten
- 1/4 c. chopped green peppers
- 2 Tbsp. pimientos
- 1 c. crackers, crushed
- 1 tsp. salt
Directions

1Saute onions and peppers in 4 tablespoons butter until tender. Mix with pimientos.

2In a 1 1/2-quart casserole, layer half of the onions, half of the cheese and half of the crackers.

3Repeat layers of onions and cheese.

4Add half and half and salt to the beaten eggs.

5Pour egg mixture over casserole.

6Mix remaining cracker crumbs with 1 tablespoon melted butter and put on top of casserole.

7Bake at 350° for 30 minutes.
